In this hand on cookery course, you will learn to prepare authentic recipes that celebrate seasonal vegetables like butternut squash, celeriac, pulses, grains, fragrant herbs and aromatic spices.

A perfect course for adventurous cooks, vegetable lovers, anyone keen to broaden their culinary repertoire and uncover the hidden treasures of Middle Eastern cuisine.

 You will learn:

  • Kashke bademjan’ – Persian roast aubergines with caramelised onions, walnuts and sour cream
  • ‘Fistikli pancar– Beetroot with silky cheese, fresh herbs and pistachio cream finished with touch of honey
  • ‘Kabak sarmasi’ – Baked butternut squash rolls filled with spiced grains served on a tahini yoghurt sauce and smoked paprika butter
  • Tursu – Baby cucumbers with maple syrup, tahini and chili crunch
  • Muhallabia – Creamy fragrant Arabic milk desert with variations of saffron, pistachio, mastika, poppy seeds, vanilla, raspberries, rose petals

After the class you will sit down to enjoy fruits of your labour with a delicious glass of wine.
