Three Quickest Healthiest Meals

Like you, I don’t have time to spend hours cooking, but I do love healthy tasty meals.  

Here are 3 easy peasy go tos – ready in minutes:

  1. Stir fry (ready made from the chilled section in Supermarkets).  Dry fry with a cup of frozen prawns until it starts to stick.  Add a drizzle of olive oil, a dash of soya sauce (avoiding sugary sauces) and a squeeze of fresh orange if you have one.  Serve with half sachet of ready made brown rice.  Cook the rice in a glass dish in the microwave and save the remaining sachet for lunch!
  2. Frozen ready made Mediterranean vegetables.  Roast  the veg in the oven with a piece of salmon on top for 20 minutes.  Serve with 1/2 sachet of puy lentils or half sachet of brown rice
  3. Chicken curry – Slice an onion and fry with thin chicken strips for 5 minutes.  Add a cup of peas, and a cup of frozen spinach, plus 1 dessertspoon of your favourite Pataks paste and half tin of low fat coconut milk. Simmer for 5-10 minutes and serve with ready made cauliflower rice or half sachet of brown rice.

Any of the proteins can be swapped for Tofu or frozen Edamame beans plus a few cashew nuts.
