Flavours of the Ottoman Empire
Flavours of the Ottoman Empire

Hosted by Ozlem Graves

The Ottoman Empire was one of the largest and longest-lasting empires in history – and one of the most culinarily inclined.

Ottoman Cuisine is a delicious and unique blend of Turkish, Central Asian Turks, Seljuks, Middle Eastern and Byzantines.

They will be teaching some of the most delicious signature dishes of sultans such as wedding soup, a celebration dish called ‘Sultan’s favourite’ and a popular milky almond dessert you can cook up at home for your friends and family to enjoy.

You will learn to cook:

  • Düğün çorbası – Creamy soup with chicken and smoked paprika butter sauce
  • Hünkar beğendi – Chunks of meltingly sweet lamb cooked with oregano and tomatoes served on the smoked aubergine and cheese puree
  • Fıstıklı pilav – Spiced pilaf with cinnamon, pine kernels and apricots
  • Keşkül – Milky dessert with almond, poppy seeds and raspberries

After the class you will sit down to enjoy fruits of your labour with a delicious glass one wine.
