Eating bread for lunch, especially white bread can spike our blood sugar, followed by a crash leaving us low in energy for the afternoon, and not fulfilling us until dinner.

 For some people who are intolerant to wheat it can make them very sleepy

Some easy quick lunches that aren’t bread based are:

  • Tuna or prawns with ready-made brown rice and mixed leaves.  Add lemon juice with extra virgin olive oil
  • Cooked chicken with radicchio, cucumber, radishes, grated carrot, walnuts and sweetcorn.  Chop everything into chunks and mix with a yoghurt lemon dressing
  • Avocado, smoked salmon or tuna with mixed beans and rocket
  • Humus with edamame beans, avocado and marinated peppers

Get into the habit of taking lunches by planning ahead for the week and buying suitable Tupperware.  

Leftovers from dinner can be a great option for lunch e.g. salmon and roasted vegetables; and roast meat is great paired with new potatoes and salad the next day
