Flavours of Istanbul

Ozlem returns to Honesty Cookery School with another distinctive course celebrating Turkish food culture.
Istanbul, which once served as the capital of Roman, Byzantine and Ottoman empires, is also one of the most important gastronomic cities in the world, thanks to its unique cuisine. Recipes from the Istanbul region inherit many elements of these civilisations, including a use of spices, rice, fruits and nuts which lend its dishes a delightful richness.
The menu will include:
- Spiral filo pie filled with delicious vegetables and drizzled with red pepper paste and spice infused butter, served with whipped feta, tahini yoghurt sauce.
- Dolma stuffed vegetables filled with rice, pine nuts and herbs and served with a garlicky tomato sauce. There will be an opportunity to create a spicy meat version too.
- Ottoman Keskul, a creamy yet light, almondy pudding, topped with tahini, pistachio and orange segments.
