Columbian born tutor, Adriana, is keen to introduce us to Cocina Latina Arepas and their traditional fillings and accompaniments.
These unleavened cornmeal cakes, crisp and crunchy on the outside with a pillowy interior, are eaten in Colombia at any time of the day – they can be a main meal, a snack or served instead of bread with soups or casseroles.
A super versatile element which can be added to many dishes. They have long been a quintessential part of the diet in many South American countries and represent a great fusion of indigenous and Spanish influences.
Adriana will divulge the secrets to creating the best arepas, flavourful rich meat or vegetarian fillings and a salsa that will perfectly balance the flavours.
