    Chris and Venus return to the cookery school with a purely Thai cookery course. The devil is in the detail with Thai food and Chris will teach you some tips and tricks to preparing, shopping and cooking Thai food.

    There will be some demonstration on this course but for the most part you will be getting your hands dirty.

    • Som Tam Malako – Shredded green papaya salad, which is fresh crunchy, sweet spice salty and sour all at the same time!  Chris will teach you how to tailor the salad to your own taste without losing the essence of the salad.
    • Gaeng Hang Lay Moo Curry – Pork Belly Red curry from North Thailand with no coconut milk.  Chris will demonstrate the red curry paste from scratch, using ingredients and techniques to help you achieve authentic and true Thai flavours.
    • Pad Kra Pao – simple yet packed with flavour, served with steamed rice and a crispy fried egg.

    Chris and Venus will talk you through the best ingredients, where to get them locally and how to combine the flavours to make these delicious dishes that will make your tastebuds zing and impress your friends!

    All levels of ability welcome.  Max class size 8 people.

    Sandham is a working chapel – join us for one of our monthly services. Dedicated on March 25th 1927 by the Bishop of Guildford, Sandham is still a working chapel. There have always been services on Remembrance or Armistice Day and services to mark other special events; there was even a wedding here in 1963. We are pleased to hold monthly services to which all are welcome. There is no need to book, but as the chapel is quite small space is limited. Booking Not Needed.

The swim is in a freshwater lake, the bike course is challenging – there are a couple of local hills, but the views and the downhills more than make up for it. The run is off-road and pancake flat with a great stretch along the Thames footpath, the is within the parkland grounds of Beale Park.

    With adults racing in the morning, and juniors racing closer to midday, along with a charity cake stall and a burger van, the whole family can get involved.

    In this hands on course we will teach you how to bake sourdough bread so that you leave the class with an intuitive understanding of what it is, how it works and how to do it at home. At the end of the Sourdough Bread Course we will have answered the following questions: – how do I make and keep a sourdough starter – how do I bake sourdough bread in my busy life – how is sourdough bread different to commercial yeasted bread. The Sourdough Bread Course is a full day.
    During the day you will get very sticky and floury as you learn how to bake wonderful crusty wheat sourdoughs with a selection of flours. You will also learn how to bake Swedish Sourdough Cracker Bread.  A two course lunch, and drinks during the day are all included.  Naturally you will have all of your freshly baked breads to take home as well as your very own sourdough starter.  The cost is £150.00

    The ever popular Sri Lankan kitchen is back.

    Sri-Lankan cuisine is very different from many types of Indian food.  It is a cuisine that is not commonly understood or cooked in the UK and is much fresher and lighter than some curries we are used to here.  Explore the vast array of beautiful vegetable and fish curries that Sri Lankan cuisine has to offer.  Being from an island Sri Lankans have traditionally relied on fresh fruit, vegetables and fish to make up their diet.  Less meat and more vegetables is largely regarded as a healthier way to eat and this course will definitely liven and spice up your dinner table and give you more ideas about how to reduce your meat intake.

    Romilla was born in Sri-Lanka and found her love of cooking both English and Sri-Lankan food from her mother, also a keen cook and advocate of home cooking, later inspiring Romilla to write cookbooks (What’s for Dinner? and What’s for Dinner? Second Helpings) and start the Food Education to promote the same ethos to educational establishments.

    We are delighted to welcome back Mariella Bliss to the cookery school.  Mariella was born in Naples and is passionate about Italian food. Her warmth and enthusiasm for her subject will whisk you away to various regions in Italy, each with their own food culture.

    The Amalfi Coast is not just the land of beautiful sea, villages and landscapes. As a result of centuries of culinary refining it produces an array of wonderful dishes. In this class Mariella will guide you through these authentic dishes from her home region:

    • scialatielli pasta with prawns and lemon zest
    • polpettine – mini meatballs, rarely showing up on menus but regularly showing up on kitchen tables
    • Neopolitan pizza – traditionally made with simple , fresh ingredients
    • lemon pasticcini dessert with a glass of homemade limoncello

    On the way you will learn the art of making fresh pasta and the secrets to a making the perfect pizza dough, along with many other hints and tips that Mariella is always so keen to impart.

    Delftware, also known as Delft Blue, is the charming variety of blue and white ceramic pottery originating from Delft in the Netherlands, with many of the classic tile designs dating from the 16th century.

    Starting with blank, unglazed ceramic tiles, you will learn all the techniques you need to paint four tiles with your own design or pattern in the Delft tradition whilst taking in a brief history of this fascinating craft. You can even take inspiration from the original tiles in-situ at the museum.

    The tiles will be taken away to be fired, finished and delivered to your house. Materials and postage are all included.

    Sasi returns to the school for a class on Southern Indian cuisine.  The cuisine of South India is known for its light, appetising dishes. Ingredients like mustard seeds, dhal, hing (asafoetida), turmeric, black pepper and curry leaves are used to give a perfect blend of flavour, colour and taste.  South Indian dishes are not just delicious but easily digestible.

    This course will include:

    • Village style chicken curry – This simple chicken curry is a delicacy from Tamilnadu.  Made with fresh ingredients and spices , it is very aromatic, and serves as a great starter, an accompaniment or as a main dish.
    • Masala egg and green pepper stir fry – a flavoursome dish made with hard boiled eggs, green pepper and onion, which can be served as a starter or eaten on its own.
    • Jeera rice – a simple steamed rice using cumin seeds and fragrant spices that pairs well with all curries.
    • Kosambari – a fresh cucumber and lentil salad.

    Max 8 people.  Suitable for all abilities.

    Create a silk painting using the traditional use of gutta and colour but then over drawing your painting in a looser line of gutta to create a different feel to your painting. Using flowers as a starting point for your paintings.

    Sarah will start the day by introducing you to the materials you will be using and run through the order of the day, explaining the process and will demonstrate where needed. You will go on to develop your own design ideas with support, working to a size of 38cm square or 38cm x 48cm. You will learn how to use Gutta, to draw your design, this is a bit like the wax used in batik, it holds the colour in areas in your picture. Hopefully by lunchtime we will reach this point, allowing it to dry while we get some refreshments. The afternoon will be spent painting up your designs, you will be shown how to mix and use the paints to create different effects. Please feel free to bring photographs and inspiration from home, however Sarah will have inspiration for you to work from provided.

    • Stretching silk on a wood frame
    • How to use gutta as a line and resist
    • How to work up a design on paper
    • How to transfer to design from paper to silk
    • How to apply silk paints, blend colours, a
    • How to fix the design
    • Ideas on mounting/framing

    This course is suitable for all levels of ability, including beginners.

    Materials are not included in your course fee. The tutor will provide all materials. The approximate cost of these will be £13 payable to the tutor during the course.

    ​​The tutor may not have the facilities to take card payments for materials in the workshops. Please remember to bring cash or your chequebook if your course involves buying materials from the tutor.
