In 2010 a tentative approach was made to Vine Works. The survey of the land came as a pleasant surprise: great land and soil, great altitude and a perfect south facing slope. So work began.
The vines were chosen to be blended for the finest English sparkling wine. Rondo – an early crop, core to the production of sparkling Rosé – Pinot Gris and those classic sparkling wine grapes: Chardonnay, Pinot Noir and Pinot Meunier. The first vineyard to be planted was 2.6 hectares and was followed a few years later by a smaller, 0.5 hectare parcel.
Greetings from Winding Wood Vineyard . . This will be our 6th year of grape production. We planted our vines back in 2013 and had our first crop in 2015. This became our first Classic Cuvée which saw the light of day in November 2019. Last December we rolled out our 2016 vintage — together with a pudding sparkling wine, called a Demi-Sec. All of our wine goes through the traditional method of two fermentations — one in the tank and the second in the bottle. The wine then sits on its yeast lees for at least 2 years before dosage. After dosage the bottle sits on cork for another six months before we consider it ready for release. It is a labour of love.
“A day without wine is a day without sunshine”
It is our vineyard’s Southerly facing land and chalky terroir that has made it the ideal location to establish grape varieties specific to the production of Sparkling Wine.
We planted our initial 5 acres of high-graft Pinot Noir and Chardonnay grapes in 2011 and managed to take a full commercial harvest off these in 2013, after an exceptional growing season. This crop went on to produce our internationally award-winning 2013 Blanc de Noirs and Classic Cuvée.
In 2015 we planted a further 2 acres of different classic Champagne varieties – Pinot Meunier and Pinot Précoce. These extra varieties allow us to enhance the character and flavour of the wines that we make, as well as help us balance the risk during the growing season, due to the fact we can harvest the Précoce at least one month earlier than the other varieties.
